New Years' Eve Eve (or veggie eve eve eve) part 1: diet

Garbage In, Garbage Out. That was the first thing I ever learned about computers.

Obviously, that can apply to so many things.

Like the body.

Like my body. As I sit here typing, my fingers ache. I mean really hurt.

As I look down I see this large mass, this thing that controls everything- My gut.

Now I've been told it, to, is sick. and that all of thee illnesses might somehow be interrelated. IMID- immune mediated inflammatory disease.

My cousin, Dr. Cush, has recommended that I try a gluten-free diet. The gastroenterologist said that I did not test positive for Celiac Disease based on my EMA-IgA test. Celiac disease is the reason one would remove gluten from the diet as it means there is an intolerance to gluten.

I have been looking hard at PeerTrainer, and their 'cheat system.'

Now I have signed up for the 21 day vegan kick start.

I am not a member of PETA, but I did donate $1 today when I bought a soda at PetSmart.

I am not giving up meat forever... but I am going to give it up for 21 days...

I am going to very closely monitor my B/S readings and record what I am doing with the insulin I do have.

I am hoping to end up with something that is a hybrid of these three systems, where I avoid gluten, remove meat from Jan 2-22, and what it means to be a vegan.

Funny, a nurse at the clinic where I get my Remicade had a challenge where she had to eat 50 different veggies in the month of December. Luckily, there are a number of farmer's markets around (Plano, TX) so that I can get a change to eat right... or at least adhere to these plans...
